If you’re looking for a delicious snack that can serve as an excellent source of energy for workouts and outdoor adventures then this is it! Energy balls are the perfect healthy snack before a workout or on the go when you’re on a snowboard trip, climbing mountains, or just need to satisfy your sweet tooth in a healthy way.
I’ve never been a fan of store bought protein or snack bars. Most of the time the ingredients and nutrition facts didn’t stand up to the advertising on the front of the package. So instead of settling for a snack bar that didn’t live up to my nutritional values or provide sustainable energy for high performance and outdoor adventures I started making my own. These little balls bring lots of flavor and energy for the long haul.
Make a batch of either recipe or both and make them uniquely your own by adding some of your favorite ingredients.
A recipe for ADVENTURES!
No Bake Oatmeal Energy Balls
(Makes 16-18) 1” balls
Ingredients
1.25 cups rolled oats
2 TBSP chia seeds
1/2 cup all natural nut butter (I like to use almond butter or sunflower butter)
1/3 cup local honey or organic maple syrup
1 TSP vanilla extract
1/4 TSP Himalayan sea salt
1/4 cup Dark Chocolate (chopped) or Enjoy Life Dark Chocolate Chips
1/4 cup organic unsweetened shredded coconut
Date Energy Balls
(Makes 13-15) 1” balls
Ingredients:
1 cup of dates (pitted and soaked in warm water for at least 20 minutes)
3 TBSP all natural nut butter
1 TBSP chia seeds
2/3 cup rolled oats
1 TSP vanilla extract
1/4 TSP Himalayan sea salt
1/4 cup Dark Chocolate (chopped) or Enjoy Life Dark Chocolate Chips
1/4 cup organic unsweetened shredded coconut
Directions:
Add all ingredients except chocolate chips and coconut to a high speed blender. (I love the Vitamix!)
*You can also add ingredients to a large bowl and mix with spatula or spoon
Pulse for about 30-45 seconds.
Using a spoon or spatula, remove the mixture from the blender and place in a large bowl
Add the shredded coconut and chocolate chips to a small baking sheet
Roll the mixture into 1” sized balls
Roll the balls into the coconut and chocolate chips
Place the balls on a baking sheet or a large container. Refrigerate for at least 30 minutes.
Enjoy!
These balls last in the fridge for up to a week or in the freezer in a freezer safe container for up to 3 months.
